Brothers-in-law Marc Del Pietro and Brian Doherty and their wives Amy Del Pietro and Lea Doherty opened Cleaver & Cocktail in 2022. Like in their other restaurants, The Block and 58hundred, they only use the best ingredients by local farmers in the St. Louis area. This resourcefulness creates a farm-fresh menu accompanied by seasonal items for everyone in the community to enjoy.
Marc and Brian are meat connoisseurs, whereas Amy and Lea are plant lovers. Together, they cultivate an inclusive dining experience that’s perfect for a variety of guests. MARC DEL PIETRO
Chef Marc Del Pietro is a graduate of the Culinary Institute of America. He has worked at The Ritz Carlton in Rancho Mirage, Le Cirque in Manhattan for Chef Daniel Boulud, and Hotel de Paris Monte-Carlo in Monaco for Chef Alain Ducasse. After spending many years away, Marc returned to St. Louis to open several restaurants of his own before finding his culinary home as co-chef of The Block, 58hundred, and Cleaver & Cocktail.
Chef Brian Doherty is a graduate of the Culinary Institute of America. After working in many prestigious kitchens around St. Louis, he is now co-chef of The Block, 58hundred, and Cleaver & Cocktail. Brian inspires new dishes with his passion for sourcing from local farmers, butchering meats in-house, and bringing fresh, local ingredients to his customers.
